Soften the cream cheese: Set it out for 30–45 minutes, or microwave in 10-second bursts until pliable but not warm. Soft cream cheese blends smoother and prevents lumps.
Whip the cream: In a cold bowl, beat the heavy cream to soft peaks.
This gives the dip lift and a fluffy texture. Set aside.
Beat the base: In another bowl, beat the cream cheese, powdered sweetener, vanilla, and salt for 1–2 minutes until silky and light. Taste and adjust sweetness.
Add flavor (optional): Mix in cocoa, lemon zest, or spices.
If adding cocoa, sift it in to avoid clumps.
Fold it together: Gently fold the whipped cream into the cream cheese mixture in two additions. Keep it airy. Overmixing can deflate the dip.
Chill briefly (optional): 20–30 minutes in the fridge helps it set and the flavors meld.
